Frugal Friday- Thanksgiving Edition

November 21, 2008

Today was going to be my first Frugal Friday post but the “theme” has been kinda switched this week for Thanksgiving.  We are supposed to share our favorite recipes, decorations, how to’s ect.

My favorite Thanksgiving recipe is something we usually call “Aunt Kay’s Potatoes”  But really its a potato/hashbrown casserole.  And it is YUM!
Aunt Kay’s Potatoes

1 bag of southern style hashbrowns (the cubed ones)
1 can Cream of Chicken soup
1 pint sour cream
2 cups shredded cheddar cheese
1 small onion diced
1/2 corn flakes
1/2 stick of butter
preheat oven to 375
Grease casserole dish with butter and add frozen potatoes. In a sauce pan on medium low heat combine cream of chicken, sour cream, cheese and onion.  Stir until melted and smooth.  Poor mixture over the potatoes and gently stir in dish (don’t go crazy here, just jiggle the potatoes around so the cheese mixture can get to the bottom so what)  Bake for 30 mins.  After the 30 mins pull it out, melt butter and coat the corn flakes with the butter.  Top the casserole and return it to the oven for about 20 more minutes, or until the top is crispy.
