Penne with Tomato Sauce and Bacon

November 6, 2008

This is a recipe that I love to make.  I’m sharing it with you because I am craving it but the bacon would not be diet friendly right now.

Penne with Tomato Sauce and Bacon (serves 4-6)
1 lb Penne Pasta
1 can tomato sauce
2 cloves garlic
1 tbsp oregeno (dried)
1 tbsp basil (dried)
1/2 tbsp onion powder
5-7 slices of a smoky bacon (maple would NOT work for this)
1/2 C grated parmesan cheese (needs to be fresh, not Kraft)
Slice bacon into 1/2 inch pieces and cook (in a pan deep enough to make sauce in) until almost crispy.  Remove bacon but leave grease in pan.  Use bacon grease to saute chopped garlic about 30 seconds.  Add tomato sauce, herbs, onion powder and bacon back.  Simmer for about 20 mins.  Cook pasta al dente and drain.  Add sauce and toss.  Add cheese, toss again and serve!
Yummy with warm ciabatta bread and a salad.

You could replace the bacon (salty, smoky) with something like a crushed chipotle chili pepper spice blend and take the whole thing in a sort of southwest direction at the same time.

looks delicious, messynester you mentioned a diet so I hope I don’t bum you out with a website dedicated to bacon: – you can always enjoy bacon vicariously through others!
