Potato Soup Recipe

I made some soup last night trying to replicate the Tuscana potato soup at Olive Garden. I think it turned out pretty well so I am sharing the recipe:

2-3 large baking potatoes
1 head of kale (aka collard greens)
1 medium white onion
3-4 cloves garlic
1 package ground italian sausage
1 box of chicken stock (free range organic)
3 cups water
1/3-1/2 Cup cream (you can subsitute milk for lower fat)

Quarter and slice onion and in a large soup pot on med heat saute with some olive oil until tender. Add sausage and cook until done. Mince garlic and add to pot to saute for about 2 mins. Mean while chop kale into bite size pieces and place in pot. Add about 2 cups of the stock, stir and cover for about 3 mins to start to wilt the kale. Quarter the potato and slice into bite size pieces and add to pot. Add remander of the chicken stock and 3 cups of water. Salt and pepper to taste. Let potatoes cook until tender then turn heat to low and add cream. Stir and serve!
